Chicken Carbonara

Chicken Carbonara- This is by far my most favorite pasta dish!!

What you need:
2 Chicken breasts (cut into bit size)
Pancetta

Bacon1 pk of Spaghetti
2 ½ Whipping Cream
8 Egg yolks
Garlic (minced)
Parsley
1 Lemon
Basil leaves
2 tablespoon Parmesan Cheese (grated)
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of Olive oil
Directions:
Boil the Spaghetti noodles until soft.
While Spaghetti is boiling, in a bowl, mix:
Whipping Cream
8 Egg yolks
1 teaspoon of salt
1 teaspoon of black pepper
Parsley (chopped) –just use like 7 Parsley, I only used the leaves and not the stems
Basil leaves (chopped)- use like 4 basil leaves
Lemon zest- meaning use a peeler and slice the skin- then minced it. (the skin will be very thin- which is what you want) Only use 1 strip, or if you have a grater- even better
Parmesan Cheese
I broiled my chicken til it’s almost ready. You can broil, grill, fry it, depends on you.
In a pan:
Heat the Olive oil, then golden the garlic
Add in Pancetta and bacon, cook til it’s almost ready
Add in already-almost done chicken, cook chicken til ready
Add in Spaghetti noodles, stir thoroughly
Add sauce you mixed earlier
After adding the sauce turn the heat to low because the egg yolks will turn into scrambled eggs instead if the heat is too high
Stir til the sauce thickens
Take off heat (place it on a stove top that wasn’t used)
You can add more parsley and Parmesan cheese to each individual plate if you’d like, otherwise, enjoy! I know it seems long and complex, but it’s actually pretty simple when you make it.
