Kaopia. (Asian soup)

What you need to make the noodles:
1 pack of Rice Flour
1 pack of Tapioca powder
3 cups of boiling hot water
Directions:Mix the rice flour and the 3/4 tapioca powder in a big bowl. Then add the boiling water to the mixture. Form the powder by folding them together using pressure with your hands (please wear cooking gloves, as the water will be hot). Once mixture is molded together, break them up into smaller pieces, about the size of your palm. Using a rollingpin, start flatening the dough by rolling it. Toss tapioca powder as you roll on the dough as it will help with the stickyness. Once all pieces are flattened, cut the dough into noodles.
What you need for the soup broth:
Half chicken (whole if you would like more meat)
10-12 cups of water (give or take, usually about 3/4 of your pot)
2 sticks of lemon grass roots
3 tblspn of salt
Directions to cooking the noodles: In a pot, boil water until simmer, add in chicken, salt and lemon grass. Once chicken is 3/4 or fully cooked take if out of the pot. Let the chicken cool. Lightly drop kaopia noodles, handful at a time distributing evenly into the pot. Make sure to have more water than noodles in the pot, add more water if needed. Let the noodles cook until it comes up to the top then sunks back into the water. The noodles will be almost transparent. Be sure to stir the noodles constantly.While stirring the noodles waiting for it to cook, shred the chicken. Once shredded, throw the chicken back into the pot and let it cook until the noodles are ready.
Once noodles are ready, dress it with green onions, cilantro, black pepper, homemade spicy garlic sauce and fish sauce. Add other ingredients at your disrection, adding jalapeƱo peppers is good too.
